Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different. The acquisition of the winery in 1978 by Mr. Joan Cusiné Hill, born in 1917 in Bellvei del Penedés, and the addition of the exemplary estates “La Torreta” and “Els Pujols” mark the beginning of the Parés Baltà...
Pale yellow color. Medium intensity on the nose with toasty notes combined with aroma of pear and apple. Fresh and alive in the mouth with dominating notes of fruit. Light and soft with a pleasant finish. Serving temperature: 6 - 8° C.
Alcoholic fermentation at 16° C in stainless steel tanks for two weeks. Second fermentation in bottle following the traditional method. Ageing in the bottle for a minimum of 18 months.

This pale organically produced cava shows a quite generous nose of pear custard, vanilla and almond biscotti. It is medium weight, fleshy yet dry with more fruit presence than many. Very nicely balanced and generous. The length is very good to excellent. Not typical cava but very engaging.See detailed press review

Possibly the best value, organic sparkling wine sold in BC, but inexplicably not in government stores. The nose is a fruity, savoury, enticing mix of wild herbs, citrus and stony mineral notes. The palate is a mix of green apples, lemon peels, nuts and citrus rind with fresh, cleansing acidity balanced by its impressive creamy textures. Extremely food-friendly and well worth seeking out in the private sector.See detailed press review
