    Paxton is Australia's leading producer of biodynamically farmed grapes, managing 300 acres of vines spread across the diverse terroirs of McLaren Vale.The company was founded in 1979 by renowned viticulturist David Paxton, although the family did not release the first Paxton wines until 2000.   • Tasting notes

    Fragrant, dark fruit and chocolate, with oak under-tones. Rich, juicy fresh fruit with hints of licorice, chocolate and a thread of vanillin oak. Mouth filling and lingering, with elegant flavours.

  • Winemaking notes

    Individual parcels from each vineyard were separately harvested, de-stemmed and transferred to a selection of open & closed fermenters. Wild fermentation occurred on some of the ferments, while yeast was added to others. A regime of pumping over, plunging and/or rack and returns was undertaken. After fermentation, the wine remained on skins until it had developed the complexity and balance required. It was oak matured for an average of 15 months in a mix of new and old French and American oak.

    Parcels from two vineyards were separately fermented and held on skins for 14 days prior to 12 months in new and used barriques. Has far greater depth and richness to its full-bodied black fruit flavours than most of its price peers, with savoury, earthy dark chocolate invisibly woven into the fruit. Will go the distance and then some.

    This is wildly aromatic, with floral hints of cracked pepper and apricot lending nuance to the dark berry fruit. The palate is richly textured, leading into a slightly warm, supple finish accented by licorice.
