An elegant pale greenish-yellow color, our Montes Outer Limits Sauvignon Blanc 2016 offers a very intense nose, with attractive tropical fruit notes of passion fruit and pink grapefruit mingled with tomato leaf and green chili aromas. A subtle mineral backdrop makes this wine’s aromatic profile even more complex. The palate is crunchy, with delicious acidity that makes it fresh and juicy. Surprisingly big volume and persistent fruit. A subtle saline touch betrays its coastal origin, making this a magnificent, elegant Sauvignon Blanc.
In terms of water availability, the 2015-2016 season could be considered normal to good, with an optimal amount of water in the soil during flowering. Summer was not very hot, with only a few temperature spikes in January and February, and temperatures were generally lower than historic averages, especially in March, when they dipped two degrees lower than in the 2015 season. This impacted ripening, delaying it 12 days or more over the previous season, and this gave the vineyard the time and the opportunity to monitor the taste of the berries more meticulously than in previous years, allowing us to very precisely define the moment in which the grapes reached their optimum ripeness, when the skins express their fullest aromatic potential and exactly the right levels of sugar and acidity are achieved.
The grapes were hand picked into 12-kg trays very early in the morning to keep them at the lowest temperature possible and transported to the winery in refrigerated containers to ensure they arrived fresh at the winery. Once there, the bunches were carefully selected and destemmed, then the grapes were deposited in a cold maceration tank (under 10ºC/50ºF) where they remained for 12–24 hours. After this, the juice was separated from the solids and statically decanted for 24 hours, then racked to the final tank minus the larger particles. The clean must was inoculated with commercial yeast to initiate alcoholic fermentation, which lasted around 30 days at 10º–12ºC (50°–54°F). Once fermentation was complete, 100% of the wine was sulfited to completely stop the yeast action and protect the wine against oxidation. After the components of the final blend were defined, the wine remained on the lees for 6–8 months.

The 2016 Outer Limits Sauvignon Blanc is from the newly created coastal appellation Zapallar in the Aconcagua Valley. It provides fresh and salty wines with a clear marine influence, as the vines are some seven kilometers away from the sea. It has pungent aromas, closer to a Sancerre than a wine from New Zealand. It's serious and austere with herbal and citric aromas, very apt for seafood, ending mineral and saline.See detailed press review
