VARNIER-FANNIERE St. Denis Brut Grand cru N/V

This grower makes only 3000 cases each year, all from their 4 ha of Grand Cru vineyards in the heart of Côtes des Blancs. Cuvée St. Denis is entirely chardonnay from Avize, and 70 percent of which is Clos du Grand Père, a 75-year old vineyard, topped with 30 percent Pierre Vaudon, a 50-year-old parcel. Fermented in stainless steel, it goes through full malolactic fermentation and it rests on its lees for 48 months. Oxidative up front, with a palate blanketed with full cream and topped with pastry, marshmallow, baked apple, roasted nuts and light sweet smoke on the lengthy, minerally finish. Striking and unique.
